This parsley pesto is a great variation on traditional pesto, perfect for when basil is not in season!


1 cup parsley, packed

½ cup walnuts, roughly chopped

2 garlic cloves, roughly chopped

¼ cup shredded parmesan cheese

¼ cup olive oil

Salt, to taste



  1. Set up your Vidiem Mixer-Grinder by placing the 1-liter jar onto the motor base.
  2. Add the parsley, walnuts, garlic, parmesan, olive oil, and salt to the jar.
  3. Secure the lid in place and pulse a few times to start the grinding process.
  4. Blend for about 10 seconds.
  5. If necessary, scrape down the sides of the jar with a rubber spatula and blend again until your desired consistency is reached

Yield: 1/2 cups
